Marie a learning experiance Ok, I tried making cream cheese and whey (no culture) and when I checked on it today it had pink mould on top (girl mould LOL) :-( I needed the whey so I guess I'll buy some organic yogurt and cheese it for the whey. Its possible you just left it set out too long and that caused the mold to grow. I just made whey and cream cheese from raw milk and had exactly the same problem. I left it set from Sunday until today and had some pink mold on top. I just scraped it off and continued on. I didn't use kefir because 1) I don't have any yet (though it's in the mail (- and 2) I want the whey to ferment veggies and I hear kefir whey is bad for that. : Are you using milk or kefir to make cream cheese? Just like kefir, it can fight everything bad wanting to grow in there (though I have to admit, I haven't had anything grow on raw milk going sour).
