I think it's a sugar alcohol without any of the negative effects of sugar, and in fact *protects* teeth from tooth decay. My mercury-free dentists encourages its use against tooth decay. I tried some at the ND's office (Thorne brand) and indeed it looks and tastes *exactly* like sugar. The ND also told me it has a glycemic index of 8 or thereabouts. Suze Fisher Lapdog Design, Inc.
