With shellfish, the problem specifically is hepatitis, if they are harvested near a sewage outflow. Personally I will NOT eat raw oysters for this reason! Shellfish also concentrate the toxins from red tide (which are not neutralized by cooking AFAIK). Fish are less problematic in this regard, tho they can get parasites. When you buy stuff frozen in a market, you are trusting the suppliers to know their stuff. I've never gotten sick off seafood myself, though I don't eat it raw. Beef is a safer bet, esp. if you've seen the beef (is it in decent health?), but a lot of people eat raw oysters locally and few people really have problems with it.
