I have read that cheeses from Switzerland are usually made with raw milk, but I can't find anything that confirms that and/or lists the varieties. I'm also concerned about the quality of the milk in foreign cheeses. Which, if any, can be considered organic? Italian cheeses, unless they're specially certified, like Parmigiano Reggiano and Parmigiano Padano (the latter is made with raw milk), are not guarenteed to be made from Italian milk, for example. Apparently, Italy has a shortage of milk, so it is often obtained from less-than-favourable parts of Europe to produce cheese. Quote Link to comment Share on other sites More sharing options...
