Guest guest
The key with juicing is to use some carrot and beet, but then do the remainder with low-glycemic vegetables. If I am remembering right, Sally Fallon suggests adding a tablespoon of raw cream to the juice. This slows down the blood sugar spike, and also enhances the absorption of the nutrients in the vegetable juice.
