RE: NT chocolate syrup

here's how i make chocolate milk: put some cocoa and sweetener of your

choice (incl. stevia) in bottom of cup. Add piping hot water -- just enough

to make a paste. Stir until cocoa and sweetener are dissolved. Then add milk

and stir. Technically not a syrup but i guess you could make up a batch of

chocolate paste ahead of time to mix with milk. Syrup is basically corn

syrup. I used to LOVE hershey's chocolate syrup when i was kid. I tasted

some a couple of months ago and gagged. It tastes nothing like chocolate!

well, green and black are makers of some seriously FABULOUS chocolate, and

they make cocoa too. they even have a delightful list of gluten free

products. their milk chocolate is totally to die for, and they use the best

possible sugar (rapadura without the trade name), blah blah fishcakes.

anyway. we use their cocoa for chocolate milk. yum!

I've been trying to wean my 8yo off chocolate milk. I bought the

Ah-laska organic brand just so I could get him to try the milk we've

started buying. Each time I make him a glass I put in less syrup.

I do like the cocoa idea for making your own if you like chocolate milk.

It's also a whole lot cheaper than the Ah-laska syrup!

It's also nice because you can tone down the sweetness considerably. If i

use sugar it is a scant teaspoon for 1.5 cups of milk. My daughter always

wants a hot chocolate when we're out then won't drink it because it is so

damn sweet.

I hate to say it, but the only way she will drink milk is if it has

chocolate in it. She's too clever to let me get away with using stevia. I

wonder if i'm negating the healthful effects of raw milk by sweetening it.

I have been slowly trying all the dark chocolates over the last year. I like

the 70% stuff. I have to agree that Green and Black is so far the best. For

cocoa though i use the Ah-laska stuff right now.
