Guest guest
)does the Ezekiel sprouted bread from Food for > >Life have gluten? I've read a claim that celiacs are able to tolerate > >ezekiel bread because the gluten has been pre-digested by the > >sprouting process. I borrowed this tidbit from: http://www.naturesorganicgoodness.ca/ezekielnew.htm " Sprouting the wheat kernel changes the wheat germ enzyme making the wheat more digestible... " " This yeasted bread has the same 6 Ezekiel ingredients but honey and oil have been added to keep the bread from crumbling. Sprouted breads are known to crumble easily. The wheat kernel is then ground into flour... " " Since sprouted wheat does not have the same rising properties, the first ingredient used is Spelt flour. Sprouted grains do not have the same gluten and protein properties which are needed in making bread. A 100 % sprouted bread, becomes a problem unless some flour is used with the sprouted grains to give the bread lift. Sprouted breads need flour added to make them edible. If no flour is used in a sprouted bread , the result will be sawdust. Sprouted grains have difficulty absorbing water, therefore the bread would not bind properly without adding flour. This is reason why we use a combination of sprouted wheat and spelt flour. " So, it would appear that not all the flours used in the product are sprouted. I imagine spelt has gluten? ~~Carolyn
