I have an organic, mostly grass-fed dairy (could be part all grass). I'm starting to sell beef but I'd like to provide the good stuff. I'm thinking of " bone soup " /stock, liver/pate, gelatin/aspic,blood?, tallow/kidney fat. Fresh/frozen/canned. I'm also planning to make a high moountain, Spring pasture Beaufort from tarentaise cattle (the best omega 3 and CLA cheese in the world). I'm breeding the calves now and looking for Alpine meadows in Colorado. Your thoughts and desires are valuable.
