In the summer, when hot soups are less appealing, it is refreshing to

make gelatin aspic salads, mousse(with eggs and cream added), and

various jellied stocks with vegetables added. Ypu might consider

looking up some recipes and giving them a try. I think you will enjoy

this way of consuming nourishing and healing broths on a hot day.

If you're looking for good aspic recipes, I suggest, Mastering the

Art of French Cooking, by Child. Notably, she adapted her

cook books to accommodate for American markets, but the French are

notorious for being food snobs and demanding to know the sources of

their foods. Regardless, the food is divine and the cookbook is

delightful to use. It's very detailed for even the most inept

cooks. :) P.S. It makes a heavenly quiche too, with or without the

crusts...
