I'm looking for ideas on getting my harsch crock very clean. It is just too

big to clean properly in the sink and the one time i was a little cavalier i

ended up with bad mold. I'm thinking after i rinse it out i would like to

spray down all the parts with a natural disinfectant and then wipe clean.

Can anyone recommend a good cleaner for this that won't affect flavor or

culturing? If you have a spray bottle recipe that would be helpful. Or would

straight vinegar be fine?

PS: I'm really enjoying my crock by the way. It is so nice to get cultured

veggies over with in one big batch that always comes out perfect.

I scrub it with a sponge and baking soda. The shiney parts don't get moldy.

However, the porous " weight " does, if you don't let it air dry. So, I wash it,

then prop the lid up on chopsticks. The weights I wrap in a dry dishtowel

and set behind the crock. They won't mold if they can dry out.

In general, either soda or vinegar make great cleaners for most things.

Soda has a good " scrubby " feel, I keep it in a shaker over the sink (with

some marbles to keep it flowing well).

Also I add a little salt to the water in the waterlock part. That way it doesn't

get slimey ... our water isn't chlorinated, and if it sets it gets slimey.

One idea to add: I use a tiny bit of diluted Citra-Solv to the cleaning

process and then rinse really thoroughly.
