Guest guest Posted June 8, 2004 Report Share Posted June 8, 2004 I went to the file section to look up how to make kefiili, but I don't quite understand the process:( Here are my questions: 1) When I puchase the grains do I get just the viili, or do I get something else? If I just purchase the viili won't I end up with viili, not kefiili? Do I purchase both viili and kefir? I've never seen kefiili grains. Am I not looking in the right place? 2) In the " How to make Kefiili " section it says to put grains into jar A. Then I'm to add milk. Step 3 says to put the lid on Jar B to be eaten later. What is in Jar B? It doesn't say, and I'm thinking I'm supposed to already know this. Which one am I supposed to eat, and when? What process am I supposed to repeat every day or two. I'm assuming that I was supposed to eat one of them. Please be patient with me. Kefiili grains are plain kefir grains that have been contaminated with viili bacteria (Leuconostoc m. cremoris). There is no such thing as viili grains although you can buy viili starter. People who culture both viili and kefir soon find out how easily kefir grains accidentally adopt the viili bacteria. Viili bacteria may not survive highly acidic environments, so if you ferment your kefiili for a long, long time and it gets extremely tart/sour, then the viili bacteria might die out and you would have regular kefir grains again. Viili produces a mild, thick, ropy product that has been likened to snot or honey in consistency. Real kefir fermented at room temperature is a thinner drinkable beverage. Kefiili is probably somewhere in between. 2. You will either have a container currently fermenting with milk and grains together, or you have a strained container of finished kefir beverage (with grains removed) ready to drink. Its an ongoing process like eating a loaf of bread while the next loaf is baking in the oven. You can buy viili starter and kefir grains separately. Plenty of people are willing to share kefir grains, but if you want kefiili grains you must ask specifically for kefiili grains. My kefiili grains are contaminated with viili, just like Darrell said. GEM Cultures doesn't sell " kefiili grains " ... just viili and kefir, which you can buy separately (which is what I did, then they cross-bred ;-) Thanks, Darrel, for the clarification.
