Guest guest Posted June 23, 2004 Report Share Posted June 23, 2004 Here is a flourless peanut butter cookie recipe that is really good: (this is off of the gfcf recipes list on - there isn't an author that I could find) I used rapadura for sweetener and have used other nut butters, as long as they are salted, and it comes out really good. The text below is from the recipe; I didn't write it. Rebekah Peanut Butter Cookies (no flour) 1 cup peanut butter 1 cup sugar 1egg 1 teas vanilla that's it.....however, here is what I have discovered : 1. a 40 oz jar of extra crunchy pb is 5 cups. 2. each cup of pb makes one cookie tray of cookies 3. use brown sugar. 4. AFTER MIXING ALL INGREDIENTS, PLACE BATTER IN FLAT PAN AND PLACE IN FREEZER FOR ROUGHLY A HALF HOUR OR UNTIL FIRM. 5. scoop batter by spoonfuls onto ungreased cookie sheet. I do all at once and place cookie sheet waiting to be baked in refr to keep cool. 6 Bake at 350 for 12 to 15 min [depending on size] until edges START TO BROWN and entire cookie is golden. 7. let rest on pan for a minute before removing to a rack for final cooling. The above produces a neat, delicious cookie. Previously, the batter would turn oily and burn. These do not Have any of you figured out how to make the gluten free peanut butter cookies without all the white sugar? Are there any cookbooks out there that are gluten free and white sugar free?
