What is different between tomato paste and tomato sauce?

To make a fermented ketchup, I need tomato paste. It gets me

wondering if it is different than tomato sauce. At health food

store, I have found many tomato sauces and only one option of tomato

paste. So, are they different?

Very. Tomato paste is more concentrated--much less water. I highly

recommend the NT ketchup, it's fantastic.

Tomato paste should be just tomato that has been pureed and had a lot of the

water removed to make a thick paste. Sauce has all sorts of other ingredients in

it (sugar, etc.) and is more liquid.
