Well, ummmmm. Fermentation and I don't get along so well just yet.

Partially because I'm not used to it (nor is my gut, I guess). Small

steps, ya know? Feel like quoting from your new book?

I know Wallas don't keep well, but if you put them in a plastic bucket, with

sawdust in between, they will keep fairly well. The trick is to keep them DRY.

If you can put the plastic bucket in a cool cellar that would be ideal (I'm

lobbying for a root cellar ...).
