Nanette-

I don't know if this helps, but I typically make a huge pot of stew at the

beginning of the week. Then every day I just have to heat up a bowl for

dinner (or whatever other meal I need quickly).

Steak and potatoes ... you can pre-bake the potatoes if you want.

Freeze the steaks individually so you can pop one out into the

broiler (I cook them while frozen, so the inside stays nice and rare).

Hash browns.

Omlettes or other types of eggs.

My basic methodology for " quick " dinners is freezing ... I bake a mess

of meat in the water smoker, and freeze it. Then for dinner I take

out some meat (like, smoked pork ribs) and bake it, the just sautee

some vegies (or steam them, depending on the mood). Hamburgers,

sausage, ribs, oven fried chicken, baked chicken ... all freeze nicely

as individual pieces.

Tacos ... make a batch, freeze them, and heat them in

the toaster oven as needed. Keep chopped lettuce,

onions, tomatoes, and salsa in the fridge.

Also soup ... make a big batch at the beginning of the week,

then ladle some out, boil it, and pour it over some good

noodles, chopped greens, chopped meat, whatever.
