Guest guest Posted June 24, 2004 Report Share Posted June 24, 2004 Hello, I have a whole bunch of cherries from our tree that need to have something done with them, besides just eating fresh, drying, freezing. I know that usual jam recipes are not really healthy because of the sugar and other stuff in them, but wasn't there a time long ago when jam was a healthy condiment? It seems like it works that way with every junky food. Was there a way a long time ago that jam was maybe fermented? There is a berry preserves recipe in NT. Has anyone tried this recipe? I am making the chutney recipe, but was hoping also to make a spreadable jam too. Does anyone have much experience fermenting whole fruits into things like jams or spreads?
