I usually take tons of jerky, apples, and nuts. And in a pinch, corn nuts (they

are GF,

if not very healthy). I can live off jerky, apples, and nuts for days. However,

for camping,

wrapping some meat and vegies in foil, grilling over a campfire, is really easy.

Or a stew.

A lot depends on food storage and if there are bears nearby. My Mom used to cook

corned beef hash (from a can) and eggs when we camped, which was great, tho

I doubt if the canned hash is really good for you (maybe better than restaurants

tho).

Eggs and bacon make a great breakfast, and they travel well. A big chest freezer

and some blocks of ice, you can carry anything. Butter keeps at any temp (ghee

even

better).

The Mongolians, BTW, used to travel with a bag of rice and some kimchi (they

didn't call it that then). You can boil rice and add stuff (dried meat, then

kimchi

when it is done) and make a decent meal. The rumor is that if they got fresh

meat, they stir-fried it on their sheilds, thus inventing " Mongolian BBQ " .

Some Mexican restaurants have awfully good food tho, esp. if they have

ceviche. " Real " Mexican is pretty NT friendly.

we go to boston once a month for work, and we take all our food with us. we

take meat that i cook ahead, cheese, and kimchi, all of which are just fine

for a day or two without refrigeration. that won't get you through your

whole trip...however, i *always* take cheese camping, even on my long two

week trips, and it does fine without refrigeration. obviously, the sharper

the cheddar, the firmer it will keep. kimchi will keep the whole time too -

it's just the meat that will be an issue. jerky? smoke it?

also, a particularly happy snack in this house is cheese and almonds:

tastes just like cheese and crackers, but it's gluten free! :) there are a

couple of pretty ok brands of canned salmon you could do...before i was all

about the mercury, we took tuna too. it was always a big thing about who

gets to drink the tuna juice - better than gatoraide (which i also wouldn't

touch now!)

you could make gorp - almonds and coconuts and hazelnuts and mmmmmmacademia

nuts, some raisins...
