Its a chewy fermented gelatinous food made from coconut water, coconut milk, pineapple juice, other fruit juices, or cooking broth from squash and pumpkin. I have a feeling that its somehow related to the kombucha scoby because of the cellulose production which makes it chewy. I created a folder in the LINKS section with some recipes on making the fermented nata and some other info. If anyone knows of a source to buy nata fermentation starter in the USA please post.
