It's a mildly unpleasant, chemical smell. I'm not thrilled about it, but do you think I could be ingesting gluten from the smell? Oh yikes--just when I thought I was doing so well! But when I was going by the bakery isle, my kids ate some french bread samples (that was before they stopped eating wheat too) and then held my hand, and then I didn't wash my hands before eating something else, and I got sick from that. So I'm just generally paranoid! I'm a lot more careful about wheat than I am about, say, chicken poop. The smell does make be nauseated though, which is a mental thing (I associate being sick with wheat, duh!). So I hold my breath if I have to go down the bread isle. But I wouldn't be in the room if someone was handling flour. Some folks I know won't eat anything from Bob's Red Mill, because even though they process the GF stuff in a different building, there is a hall connecting the two buildings. I love the smell of yeast though ... too bad your bakery smells chemically.
