It sounds like what's also referred to as a " bug " . It is something like a

scoby, though never having made ginger beer that way myself I don't know

whether it technically qualifies, but basically, my understanding is that

you keep mixing ginger and sugar (and water? I forget) and letting it sit

until enough microbes of the right type have grown to make for a good

starter. I think NT mentions bug-making, but I'm not sure.
