pickled beet question

Hey everyone, I'm just popping in to ask about the pickled beets I

made a while back. I finally got around to tasting them and they

are great, but the liquid is now very thick. Is this supposed to be

that way? I'm so used to the vinegar preserved kind that it was a

bit disconcerting :)

Also, while I'm at it, is there a website with a list of typo's for

Nourishing Traditions?
