" --Carl Sagan Here's an article explaining why fats don't turn into trans fats when heated: http://www.westonaprice.org/know_your_fats/howtransform.html I'm not sure what you're concern is about coconut oil. If you're concerned about saturated fats in general causing heart and cholesterol problems, then read anything in the Know Your Fats section on the WAP site. There are several referenced articles on both the health benefits of saturated fats and one article specifically on coconut oil: http://www.westonaprice.org/know_your_fats/know_your_fats.html And the Cholesterol Myths site http://www.ravnskov.nu/cholesterol.htm Here's an article from Ray Peat about coconut oil: http://members.efn.org/~raypeat/coconut.rtf Katy
