The longest large health study appears to be the many Island populations

themselves who are free of heart disease as long as they remain on their

traditional diets. That's enough of a study for me.

No, it doesn't. No oil turns into a trans fat when heated.

I'm not sure what you're concern is about coconut oil. If you're

concerned about saturated fats in general causing heart and

cholesterol problems, then read anything in the Know Your Fats

section on the WAP site. There are several referenced articles on

both the health benefits of saturated fats and one article

specifically on coconut oil:
