Guest guest Posted July 11, 2004 Report Share Posted July 11, 2004 Hello I have a problem with cookies that crumble ever since I started substituting with healthier ingredients, like no margarine. When I first take them out off of the cookie sheet, the cookies are really flat, then start crumbling. Does any one have any suggestions on how to maintain a whole cookie in shape? Typical basic ingredients that I use in a cookie recipe: - all butter - all freshly ground wheat - raw sugar cane crystals, or turbinada sugar - rolled oats - chocolate chips (yes, yes, I know!) I have tried adding a bit of kefir, but that doesn't seem to help. I have also tried putting the cookie dough in muffin tins to maintain a better shape, but they still crumble. I have left the cookies cool on the cookie sheet before removing, it still crumbles. Kids just won't eat crumbs . . . nor guests for that matter.
