With orange >sauce! > >-- Heidi Jean so you roast the whole thing? that's what i did last night. it was pretty good! orange sauce would have been even better! i'd never had duck before: it was a lot of work for the meat (these were large rouen ducks, but still), but it was tasty. the meat is much firmer than chicken: it's kind of like turkey-flavored steak. today? it's soup! -katja ps - wanna toss over your orange sauce recipe? I don't like white meat. But the other day I roasted a big 10 pounder, and just took off the breast meat. I pounded it into steaks and did " chicken fried chicken " ... man, that was good! Fried in breading it was nice and tender and juicy ... everyone was fighting over it. You can also pound it out flat and roll it with cheese and basil and pine nuts, or stuffing, or whatever and braise it in tomato sauce (you can use any meat in a meat roll like that). >ps - wanna toss over your orange sauce recipe? Recipe? Recipe? :--) I cheat and do it like my Mom did ... put some OJ concentrate in a pan, add some water til it tastes right, then add some corn starch mixed with water (or some of the oj mix). Then add fresh ginger or ginger powder, salt, cook til thick.
