This is from the 1908 Rumford Complete Cookbook:

Fig Filling (for cakes, but maybe you could NT some Newtons)

1 pound figs

1 cup water

2 tablespoons sugar

Juice of one lemon

Pass the figs through the medium cutter of a meat chopper, add the

water and sugar, and cook till they form a thick pulp. Add the

lemon juice, beat well and, when cool, spread between the layers of

cake.

Enjoy!

Do you think that you could do the same with dates as well. We love the

dates we can get through our buying club and I have a few recipes for

them, but not really NT style, if you know what I mean.

I've never tried the recipe, but go for it! This recipe uses so

little sugar I don't think you could go wrong.

Thanks Danelle! There is plenty of sugar in the dates themselves. Next

time I get some, I’ll try it out.
