Guest guest Posted August 7, 2004 Report Share Posted August 7, 2004 This is from the 1908 Rumford Complete Cookbook: Fig Filling (for cakes, but maybe you could NT some Newtons) 1 pound figs 1 cup water 2 tablespoons sugar Juice of one lemon Pass the figs through the medium cutter of a meat chopper, add the water and sugar, and cook till they form a thick pulp. Add the lemon juice, beat well and, when cool, spread between the layers of cake. Enjoy! We love the dates we can get through our buying club and I have a few recipes for them, but not really NT style, if you know what I mean.
