This is a second announcement just in case anyone missed it. I'm not associated with them - they are just fantastic! Today saw the potatoes were not just roasted but 'potatoes confit.' I asked " Does that mean olive oil? " They said, " No, chicken fat. See, the chickens roast on the rotisserie, the fat drips down and the potatoes cook in that. " Even better - splendid! Also recently discovered Grindstone Bakery. They don't have a website but there is a story that appears if you google it. Available at Whole Foods and maybe a few other places. They make spelt, rye, oat & barley and other breads - no wheat. If you were imagining an NT bread, this would be it. They grind the flours themselves, use all whole grains, long slow natural rise (no yeast), and Celtic sea salt. They are rich and toothsome and filling and I definitely do *not* get the reaction from these breads than other artisan breads that have more white flour (Acme, Boulangerie, etc for those of you here in NoCal).
