Guest guest Posted July 3, 2004 Report Share Posted July 3, 2004 For Thursday night beef temps at my place of work, we had these orders (from my tables only): 2 well, 3 med well, 3 med, 2 med rare, 1 rare 18% ordered well done beef 27% ordered med well beef 27% ordered medium beef 18% ordered med rare beef 9% ordered rare beef 72% ordered their beef medium or higher 45% ordered their beef medium well or higher only 27% ordered their beef medium rare or lower. twice as many people ordered well as ordered rare. The sampling is pretty small, but if I have the opportunity I'll keep a running tab on this. What I consider acceptable, which most folks on the list would probably tend to agree with, is cooked about half as much as a " rare " steak. So at least medium, and I would even consider med rare as well, should be considered " overcooked " by our standards.
