Interesting online books on fermented foods

Hi all,

I came about these articles or actually books which might be of

intrest here. They are made by FAO, The Food and Agriculture

Organization of the United Nations.

Just going through the first one, there's plenty of fermented foods

that are new to me and recipes are included. Plus a wealth of info on

the topic.
