I raise meat and dairy dairy goats on a small farm in Michigan and as a firm believer in getting as far away from processed foods as possible, I raise most of my meat, eggs and veggies. The current thread on chicken feet reminded me of some files I saved a year ago from a pastured-poultry list about cleaning chicken feet for making chicken feet soup. I tried this method last Thanksgiving with turkey feet and it works pretty well, and the broth made amazing gravy because the feet create a very thick, gelatinous stock. To peel chicken feet, put the feet in a heat-proof bowl, cover them with boiling water, and let them sit in the boiling water for at least 15 minutes. Then plunge them into ice water; this will make them easier to peel. With a sharp knife, peel off the entire outer layer of tough yellow skin.
