Here is some good news for raw cheese lovers. I got it from " mother

's " ( Forristal)monthly updates:

" A raw milk cheese of distinction

Cruise over to <http://www.zingermans.com/> http://www.zingermans.com, to

check out some L'Etivaz. Owner Ari Zingerman (he has a thriving gourmet

store in Ann Arbor, Michigan) doesn't clearly identify the source of this

raw milk cheese, but I will. It is from Switzerland and from the milk of

cows kept on summer pasture high in the mountains, 2900 meters or higher.

For some unknown reason, I had to type the word Gruyere into Zingerman's

search engine instead of L'Etivaz to find it. If you order, I would

love to

know what you think of this wonderful cheese. "

Just think, I wrote to the Swiss cheesemakers to find out where I can

get it in Italy (where I live), and they told me that they don't sell

it here. So I guess I'll have to wait until I go back to the United

States to get some Swiss cheese!
