I reposted it ... as for the corn ones not rolling well, sounds like you need a tortilla warmer! Basically you put the tortillas in a container and either microwave them for a minute, or heat them in the oven for a bit. They soften right up, and you can fold them any way you like. Again though, just about every culture has a " flat " bead, and they can be made out of just about any flourlike substance. Making them with leftover baked potatoes mixed with egg and flourish stuff works nicely too (see " lefse " ). Potatoes have a great texture. Another rolled food though is crepes! They are sooo easy to make, my 10 year old usually does them. I grew up with them, only we called them " Chinese pancakes " . You can fill them with the classic canned fruit (eeesh) and top with powdered sugar, or better, goat cheese and roasted nuts (and basil?) or some of those nifty new recipes floating around. Also, you can get " spring roll wrappers " at most Asian stores and some regular groceries. You soften these in warm water (just dip them) and lay them on a clean towel, then fill with goodies. They are like the Moo Shoo Pork wrappers you get at restaurants ... really inexpensive, but fancy looking to serve. There are lots of recipes online, or just use leftover anything. Another favorite rolled food here is sushi. I use seaweed wrappers ... make some rice in advance (short grain, then add spiced rice vinegar) in the fridge. When folks get hungry, whip out a seaweed sheet, layer with rice, add filling (tuna, leftover hamburger or any beef, lox, pickles, cream cheese, etc.) and roll. They don't keep well, IMO, once rolled, so I make them fresh. I sliced some fresh ginger and soaked it in rice vinegar, and it keeps indefinitely in the fridge that way, and it makes a nice addition (put it on top, or roll it in). Seseme seeds too.
