Guest guest Posted September 15, 2004 Report Share Posted September 15, 2004 Actually what I usually do is use the Joy of Cooking, and substitute sorghum flour for wheat. Use 1 cup sorghum and 1/2 to 1tsp of Xanthan gum and cook as per usual. Other people have said they use corn starch instead of wheat flour. For bread things get a little more picky ... my " white bread " recipe is in the archives though and it works well. For noodles, I just buy Tinkyada, or those Oriental yam or rice noodles, and spring roll wrappers. I don't do a whole lot of grain baking though ... our meals center around meat/vegies/fruit (and potatoes count as a vegie in my book) and the baked stuff is for fun. I use corn tortillas for snacks for the others (tacos, or just slather them with refried beans and a little cheese and pop them in the toaster oven). None of the grain/baked goods sets as well with me as a good steak ... Anyway, I have tried a couple of the GF cookbooks but they haven't been very useful ... too many different types of flour etc., plus a lot of the recipes are like, " so what " (I mean, most foods never did need wheat flour, I don't need help making wheatless gravy, for instance). Her recipes use only cornstarch & potato starch, no rice flour. She has some easy doughnut recipes that I enjoyed making for my little boy who has been off gluten since he was 18mo. He'd been watching the people in our church fellowship eat doughnuts every Sunday for a year and was really wanting to try some. I use the recipes in Cook's Illustrated magazine quite a bit. They are very detailed, use basic ingredients and are generally easy to convert to GF.
