Do you use canned coconut milk? :Thanks, :Irene Hello Irene Some people kefir the clear coconut water from green young coconuts. Other people kefir the white coconut milk pressed from the meat of brown coconuts. Be aware that culturing your dairy grains in non-dairy liquids for extended batches can damage them permanently. Canned coconut milk (not Cream of Coconut) should be ok but check on the label to avoid harsh preservatives that might affect fermentation. The grains should live okay if you culture them in alternating batches of milk and then coconut milk. Water kefir grains might be better for kefiring the clear coconut water from green coconuts. Water grains prefer an acidic fruit and they cannot be used in real dairy milk. Hint: In any seedmilk, nutmilk, or soymilk, add 2-to-3 teaspoons of lemonjuice to each cup of liquid before kefiring with grains. Probably more than you wanted to know, huh?
