I guess i could just do patties but i like how neat the casings make storage. Are there any sausage making books people can recommend? Has anyone made their own apple sausages? I really like those. The only technical difficulty was that grinding lumps of meat with the stuffer attachment at the same time seems to bind up the worm with the marbling and fat. The blade seems to bog down, which doesn't happen when I'm just grinding the meat without the stuffer attachment. The next time I make sausage, I'm going to grind the meat first, then run it through the stuffer with a naked worm. I'm using a charice recipe that I found online and my husband was very happy with it.....the kids found it to be too spicy.
