Guest guest Posted September 14, 2004 Report Share Posted September 14, 2004 i think the smell is the milk rotting, or souring beyond belief. that happened to mine too. what i did was change out the water every couple days, rinse the grains with fresh water and put them in sugar/water mixture. mine are now in grape juice, and they make a strange fizzy concoction but the milk is defintely gone. they're a funky purple color now. took a week or two. -------------- Original message -------------- Hi all, I've been successfully keifering milk for a couple years now, but I'd like to make keifer water and beer, and other drinks...I read on Dom's site (I think) that you can convert milk keifer grains into water keifer grains by keeping them in water for a period of time. Well, mine have been in water at room temp. for awhile now, and the mix smells AWFUL. They will eventually disintegrate and die. Chances are your dairy grains have been permanantly damaged depending on how long they have been in water at room temperature. Dairy grains can be used to ferment batches of non-dairy media by putting them back in milk in alternating batches or using a media that is at least 50% dairy/50% non-dairy. Guest guest Posted September 15, 2004 Report Share Posted September 15, 2004 it has a bubbly consistency with a taste similar to wine, but without the alcohol. it reminds me of the smell of making wine when i did that last year. if you leave it for too long it's almost too tart to drink.
