dandelion uses

Medicinal herbs are my hobby and dandelions are one of my favorite herbs...

so many things you can do with it!

Dandelion Tea:

Every spring when the dandelions are blooming and tender, I collect lots of

leaves to dry for winter teas. I like to blend dandelion leaves with red

clover blossoms, mint and raspberry leaf.

Dandelion Vinegar:

My favorite, so much so that I make several quarts of it every spring and

fall.... each tablespoon contains over 175 mg. of calcium. Dig up and wash

entire plant, blooms to roots; pick off dead leaves, etc. Chop finely, place

in quart jars and cover with real cider vinegar (check the label, because so

often in the store what looks like cider vinegar is really cider-flavored

white vinegar with coloring). Cap, and let sit for six weeks; good for two

years, but never lasts that long here, lol.

In the summer I drink 1 Tblsp with ice water and honey for a refreshing

thirst-quencher with lots of potassium; in the winter, I add hot water and

honey. Also good for salad dressings, and don't be afraid to eat the

pickled roots, flowers and leaves... tasty and healthful!

You can also cook with dandelions in the spring when they're tender... I

like dandelion quiche and omelets, among other things.
