Guest guest
take a quart of kefir and toss it into a cheesecloth-lined strainer. let it sit for a few hours - just enough to get most of the whey out, but not enough to get it sour-er. in a blender: the kefir-minus-whey, again as much heavy cream (ends up being maybe a cup of each. add extra cream if the end result is still too tart), four egg yolks, two small spoons of raw honey, and vanilla. blend well. serve: over berries, blender it with frozen berries for " soft serve ice cream " , cut it with heavy cream and serve with " cereal " (chopped sprouted nuts, coconut shreds, coconut oil, roast at 350 for half an hour) and grapes, use it as a smoothie base... keeps about a week (maybe longer) in the frige. -katja
