I thought I'd have a go at making my own. I got the finest

dessicated coconut I could find, then whizzed it in the food

processor till it was even finer, though it didn't go quite to flour

texture. then I made katja's carrot cake recipe, and used 1/2 cup of

my coconut " flour " and only one cup of ground almonds.

Even without sweetener, and even though I forgot the cinnamon, and

even though my batter was too runny and it came out more like bread

and butter pudding than cake, it was pretty damn fine.
