I have been using cabbage, beet, lemon, apple, and egg yolk. Then I

found out that raw cabbage is not good to eat on a daily basis. I

wonder....does this include fermented cabbage? I have been eating

sauerkraut daily.

Gracias!

No worries. The key problem with raw unfermented cabbage is the

goitrogens, and a secondary issue might be the digestibility of sugars

(?), but raw fermented cabbage doesn't have this problem--the

goitrogens are eliminated--and as far as I'm aware, pretty much anyone

can digest it fine. The same applies to brassicas in general. When

I have it (depending on season, but most of the year), I eat

sauerkraut and/or kimchi daily! Yum!
