The current version of Discover magazine has a great article

about the " Inuit paradox " , which gets into a lot of the stuff

we've discussed here, including Steffanson's view of the

Inuit diet, why the Inuit didn't get scurvy, Loren Cordain's

views on diet, how the Inuit diet differs from Atkins, different

kinds of fat, etc. While some of the details aren't all there,

it's amazing stuff for a mainstream magazine!

One of the details he mentions is that Steffanson went

on a low-fat almost all protein diet in the hospital to

show how it didn't work ... he lost a lot of weight and

got sick (which is what happened when he was with the

Inuit and didn't get enough fat at the end of winter, when

the animals were too lean). The article talks about the

" protein ceiling " and how you must have fat if you drop

carbs. It also talks about the Inuit having larger livers

and having more urine, likely to accomodate gluconeogenesis,

which is hard on the liver. So much for " Low carb doesn't have

to mean high fat! " Although since Steffanson lost so much

weight so quickly on the high-protein low-fat diet, it would

be tempting to folks wanting to lose weight REALLY fast.

Anyway, I recommend buying the magazine while it's on

the newstands.
