Thanks - Lawrence " I store mine at room temp in tea, or half tea and half water. I keep it slightly sweet by tasting every 3 days, adding sugar if necessary - organic sugar is said to be best. Then every now and then I take the scoby out, drain the liquid carefully and clean out yeast from the bottom (too much yeast puts the matrix out of balance I find) - clean the jar and lid with running water and a brush, then replace the contents. What is the most common method of freezing and then reconstituting extra SCOBYS? Thanks - Lawrence " I would never freeze a scoby. I was given one which had been in the fridge for months, allegedly in a 'dormant state' and now it does not seem to be able to reproduce at room temp, to the distress of its original owner.
