We've been GFCF and rice, corn, nut, egg, etc. free for over a year now. It's hard at first, but totally do-able! My son doesn't eat bread at all, because I simply haven't found a bread he CAN eat, and all the homemade loaves I've tried have failed due to all of his resrictions. But you know, he doesn't miss it. I make muffins, pancakes, cookies, etc. all from scratch with grains like sorghum, quinoa, amaranth, teff, tapioca, arrowroot, etc. I would be really hesitant about the gluten, espicailly if he seems to have a leaky gut (which is likely based on his food panel results). You can still do SCD without it being "high-protien". As long as he is not intollerant of all fruits he can eat lots of those. My son is SCD and he eats alot of bananas and can drink watered down white grape juice which is full of natural sugars. He also has plenty of butternut squash which is high in carbs. Just do a little carb counting (the other way) and see what things you can do to replace the rice etc without resorting to gluten. I think you will undo a lot of hard work if you bring it back.
