I would imagine it's nutrient breakdown when rehydrated with just water should be very similar to that of a wheat based starch. From ESHA Food Processor: 3.23 oz or 100 gm cooked w water: Excha = 1.4 bread/starch, cals 112, pro 3.79gm, cho 23.22 gm, fat 0.16 gm. marginal vit/min content. Guest guest Posted November 17, 2006 Report Share Posted November 17, 2006 I buy and cook Isaeli couscous very often (yum-yum) and the product label I buy states that 1 cup of cooked couscous equals 42 grams total carbohydrate so seems to be equal to rice as far as servings/exchanges.
