Progresso has great Cream of Mushroom to take over gluten induced 's for recipes, and Jewel now has a gluten free area in the health section, with meals as well. Whole Foods Market, if by you, offers a gluten free bakery, with warm fresh items! MMMM! I have a ton of tips, just ask! Patty, I feel so good on this diet, it saved my life, after removal if implants. The headaches, weight gain, bloating, fatigue in the afternoon, and numbness in that foot-gone.(BTW_ That was due to damage in the intestine and not getting enough b vitamins from celiac! Who would have thought?) If you have osteopenia, or osteoporosis, most celiacs do from years of not absorbing calcium correctly,and can reverse bone loss on a gluten free diet! Better days are ahead. According to the test results, I have one of the main genes that predisposes to gluten sensitivity and celiac sprue; however, at this point I do not have full blown celiac disease as evidenced by the lack of intestinal IgA antibodies to the human enzyme tissue transglutaminase, (no gluten induced autoimmunity) nor do I have malabsorption. What I do have is an active dietary gluten sensitivity as evidenced by the Antigliadin IgA, which was elevated. For optimal health and to prevent further damage, it is my best interest not to eat any foods containing gluten. So, even though I can still eat it and not feel bad, my goal is to find other flours to make with my stone grinder that are gluten free. If I didn't know about it, why would I not eat wheat products? I don't have huge problems associated with it. You know, it's probably kinda like implants. Until you have more info, you really don't put two and two together. Little symptoms crop up and you just attribute it to aging or something else. I guess that is what happened with this gluten sensitivity. Now that I know I can stop using wheat, rye, and barley products and hope that I experience stellar health.
