I have made a diabetic lemon cheesecake, a recipe that I got on the Net somewhere, and have posted here before, except instead of two pkgs of cream cheese, you use 1 plg plus 1 cup of light cottage cheese, mix it all up in the food processor, add the jello that's dissolved in 2/3 c of boiling water, then stir in 2 cups of lite Cool Whip stuff. I have made it with strawberry and raspberry jello, topped with fresh fruit, but this time I am trying the lemon jello. It needs some fruit of some sort for the top, so I dont know what I will find in December in Ontario....!!!! I am also going to buy some sugar free ice cream. It's good we can buy or make these sorts of things to allow us to participate in celebrations and hopefully not feel too deprived. Subject: Birthday Meal Yesterday was my birthday and I was able to celebrate with a yummy low carb meal at Chili's. I had their divine steak fajitas with lettuce wraps rather than flour tortillas. Worked out just fine. Also had an appetizer that also came with lettuce that you wrapped around chicken, cabbage, puffed noodles (skipped those) and dipped it in peanut sauce. Came home and had some sugar free chocolate pudding made with cream instead of milk. It was ooey gooey and really delicious. I had been craving Hershey's chocolate and hubby bought me some Kisses. Figured 1 kiss has 2-3 carbs in it. Well, I froze the bag (to make each one last a looooong time) and put one on our dessert. It was so yucky. Reminded me of chocolate covered raisons, which I always hated! So no cravings there. Blood sugar after dinner was 95, after dessert 102. Not bad for a celebration, I thought. For Thanksgiving I made lemon cheesecake (recipe from " someone " on another list) Dissolve 1 small pkg. of sugar free lemon Jell-O in one cup boiling water, then add 2-8oz. pkgs. of room temp. cream cheese and mix well. Pour into pie plate and chill. Was very yummy!
