Guest guest Posted March 4, 1999 Report Share Posted March 4, 1999 Hi group, I have just been lurking here, but I am going to share a little about how I try to keep my situation under control. I was diagnosed a year and a half ago as having type 2 diabetes, and I didn't do a whole lot to control it, other than cutting out sweets most of the time. But lately I have started to take it all a lot more seriously. I like to eat a lot of vegetables. Lettuce and things like that (salads) don't do a lot for me. There is this wonderful vegetable, jicama (a Mexican thing) that is very crunchy, high fiber, and doesn't have a lot of taste. If you slice it, it is almost like snacking on crackers or something. I am not interested in consuming much fat, or protein for that matter, and although I haven't read the Atkins Diet, I heard that Atkins seems to think that fat is not so bad and that lots of protein is okay. I just don't want to go that route myself. I heard that the pancreas can actually heal itself if one stays away from fat. Since I live here on the border, I have a situation wherein I have to watch out for super-unhealthy Mexican food. But, on the other hand, there are lots of advantages, too. Like, for instance, some of the natural remedies are really great. The main one is nopal: the lowly prickly pear cactus, which is eaten as a vegetable, used in salads (cooked), and even taken as capsules and tablets as a diabetes treatment. It does lower my BG's. In fact, I have to be careful how I use it, in terms of timing my eating and my exercise with its intake, or I can start getting hypoglycemic all of a sudden! Another thing is that there are other herbs that are commonly used here that are beneficial. One is damiana (or damian, I think is the English name for it). Another food that is good is the chayote, which is high fiber. My wife just boils a bunch of them, and I eat them whole, cold, out of the ice box. Filling, but all water and fiber, and very tasty. For me, fiber is an important part of my diet. Exercise is also very good, since a half hour of exercise lowers my BG's about 40 points. I walk and carry dumb bells, which I lift and swing around in all different ways. It is really sort of fun for me. In order to prevent hypoglycema while exercising, I eat a small handful of peanuts. I don't think that the fat that you find in nuts is as bad for you as animal fat. My mom, who has read more stuff on diabetes than what they have in the Library of Congress, I think, told me that the protein molecule binds with the carbohydrate and sugar molecules, forcing your body to take its sweet time about absorbing it all, and keeping your BG's from spiking. I sprouted some wheat grains, and then blenderized them with a little water, and mixed in whole wheat flour with a little vegetable oil and am whole lot of bran, and made tortillas with that. They were very hard and a little difficult to chew, but very tasty. I ate them with some vegetable soup, which had just a little chicken in it ot give it flavor, and protein. With this little bread item, I am as far away from a simple carbohydrate as I can get, in the bread category, I think. Dipping the pieces of rock hard ultra high bran tortillas in the soup softens them enough to keep from wrenching my teeth loose. I hear that 6 ounces of chicken gives you all the protein you need for one day. The soup consisted of big chucks of carrots, cabbage, squash, onions, garlic, and tomatoes. In Spanish, this kind of soup is called " caldo " . It is easy to make. The thing that makes it interesting is the fact that no one wastes a lot of time chopping everything up real fine. Chunky is better. I put some wonderful chile sauce that my wife made in my veggie soup. If anyone wants my wife's chile sauce recipe, just say so. I have learned to live with no sweets at all. Naturally, I am going to avoid sugar. But artificial sweeteners don't do me a lot of good either. Saccharin tastes awful, and the other kind, aspartame, makes my BG's go up and also causes me to have headaches, joint pain, heart palpitations, and anxiety. I bet just about any diabetic who uses it will find that if they stop, they will have lower BG's as a result. I have learned to appreciate the natural taste of things that I didn't think really had any flavor. I notice a huge difference in my blood sugar levels when I run out of garlic pills so I know that it works. Garlic pills lower cholesterol too. Im also keep an eye on fat, but not too strong an eye (unless you count looking at the food when i eat). I use splenda and it tastes oh so yummy. (I can't use asparatame). His cookbooks are full of good things which don't send my bg's over the hill. He also makes nutrition bars sweetened with splenda which are super good and help my taste for chocolate. Oh, about Jicima..... It is great sliced thin, and sprinkled with a little salt, lime juice and chili powder. It has a slightly sweet taste to it as it is, but I prefer salty/sour snacks. It doesn't cause any side effects and they have done studies to prove that garlic lowers blood sugar, cholesterol and helps prevent colds. I find that it really works good for me. For example, (these are not the exact numbers, just approximate) a Lite Ranch salad dressing had 40 calories, 3g of sugar and the Reg. Ranch had 130 calories and 1g of sugar. I am used to it either being offered raw and peeled for salads or served with lime, chili powder and salt. It can be cooked like turnips though I think. Where does one find carbohydrate and sugar counts for exotic ethnic foods? I like a lot of that kind of food, but have NO clue as to what is in it.
