Pat -

I eat lowfat popcorn. ActII has a low fat butter lovers which is really quite

good. Half of a bag is 15 carbs. Very satisfying. Also, sugar free pudding,

if you are in a sweet mood. Only 8 carbs in a half cup serving.

I make homemade jerky in the dehydrator and it really helps me with that

potato chip crunchy salty desire and doesn't affect my Bg's at all...Also

If I eat a couple of peices before bed it seems to help with my AM Bg rise

I follow a low carb diet (Atkins) and my bg's are in much better range now.

(Was hovering around 200! now 95 - 135)

It's a great food plan, never hungry and always something to eat :)

also have lost 14 lbs.

Hi group,

I have just been lurking here, but I am going to share a little about how I try

to keep my situation under control. I was diagnosed a year and a half ago as

having type 2 diabetes, and I didn't do a whole lot to control it, other than

cutting out sweets most of the time. But lately I have started to take it all a

lot more seriously.

I like to eat a lot of vegetables. Lettuce and things like that (salads) don't

do a lot for me. There is this wonderful vegetable, jicama (a Mexican thing)

that is very crunchy, high fiber, and doesn't have a lot of taste. If you slice

it, it is almost like snacking on crackers or something. I am not interested in

consuming much fat, or protein for that matter, and although I haven't read the

Atkins Diet, I heard that Atkins seems to think that fat is not so bad and that

lots of protein is okay. I just don't want to go that route myself. I heard that

the pancreas can actually heal itself if one stays away from fat. Since I live

here on the border, I have a situation wherein I have to watch out for

super-unhealthy Mexican food. But, on the other hand, there are lots of

advantages, too. Like, for instance, some of the natural remedies are really

great. The main one is nopal: the lowly prickly pear cactus, which is eaten as a

vegetable, used in salads (cooked), and even taken as capsules and tablets as a

diabetes treatment. It does lower my BG's. In fact, I have to be careful how I

use it, in terms of timing my eating and my exercise with its intake, or I can

start getting hypoglycemic all of a sudden! Another thing is that there are

other herbs that are commonly used here that are beneficial. One is damiana (or

damian, I think is the English name for it). Another food that is good is the

chayote, which is high fiber. My wife just boils a bunch of them, and I eat them

whole, cold, out of the ice box. Filling, but all water and fiber, and very

tasty.

For me, fiber is an important part of my diet. Exercise is also very good, since

a half hour of exercise lowers my BG's about 40 points. I walk and carry dumb

bells, which I lift and swing around in all different ways. It is really sort of

fun for me. In order to prevent hypoglycema while exercising, I eat a small

handful of peanuts. I don't think that the fat that you find in nuts is as bad

for you as animal fat. My mom, who has read more stuff on diabetes than what

they have in the Library of Congress, I think, told me that the protein molecule

binds with the carbohydrate and sugar molecules, forcing your body to take its

sweet time about absorbing it all, and keeping your BG's from spiking.

I sprouted some wheat grains, and then blenderized them with a little water, and

mixed in whole wheat flour with a little vegetable oil and am whole lot of bran,

and made tortillas with that. They were very hard and a little difficult to

chew, but very tasty. I ate them with some vegetable soup, which had just a

little chicken in it ot give it flavor, and protein. With this little bread

item, I am as far away from a simple carbohydrate as I can get, in the bread

category, I think. Dipping the pieces of rock hard ultra high bran tortillas in

the soup softens them enough to keep from wrenching my teeth loose. I hear that

6 ounces of chicken gives you all the protein you need for one day. The soup

consisted of big chucks of carrots, cabbage, squash, onions, garlic, and

tomatoes. In Spanish, this kind of soup is called " caldo " . It is easy to make.

The thing that makes it interesting is the fact that no one wastes a lot of time

chopping everything up real fine. Chunky is better. I put some wonderful chile

sauce that my wife made in my veggie soup. If anyone wants my wife's chile sauce

recipe, just say so.

I have learned to live with no sweets at all. Naturally, I am going to avoid

sugar. But artificial sweeteners don't do me a lot of good either. Saccharin

tastes awful, and the other kind, aspartame, makes my BG's go up and also causes

me to have headaches, joint pain, heart palpitations, and anxiety. I bet just

about any diabetic who uses it will find that if they stop, they will have lower

BG's as a result. I have learned to appreciate the natural taste of things that

I didn't think really had any flavor. Like, believe it or not, real oatmeal (not

the instant kind): It's pretty tasty actually, all by itself.

I don't have information on a snack that keeps blood sugars down but I do

take garlic pills and they work. I notice a huge difference in my blood

sugar levels when I run out of garlic pills so I know that it works.

Garlic pills lower cholesterol too.

Hi,

Regarding garlic, is there a form you can take that doesn't produce the

" garlic " smell? I work with someone whose breath always has a garlic odor.

I'd love to try it, but won't do it if that's not avoidable.

Thanks.

I follow atkins diet also, I snack on cheese, salami, sometimes on homemade

icecream using his recipes. I use splenda and it tastes oh so yummy. (I

can't use asparatame). His cookbooks are full of good things which don't

send my bg's over the hill. He also makes nutrition bars sweetened with

splenda which are super good and help my taste for chocolate.

In a message dated 99-03-04 17:07:58 EST, you write:

<< Use splenda to make your bar-be-que sauce and enjoy. >>

Could somebody tell me what Splenda is? A sugar substitute I am guessing.....

Is it easily found? I had just weaned myself off of most sugar and learned to

like my tea with lemon only. But, SO many foodstuffs have sugar in them.

Especially sauces.

Also, I have started to lower my carbohydrate intake (HARD for me because I

eat little if any meat and lived on grains, pasta, and vegetables. LOTS of

casseroles, etc...) I have limited my carbohydrates to only one meal a day (I

only get 2 meals and one snack) and only whole grains. (Whole grain pasta,

brown rice, etc....) Are there any cookbooks/tips for vegetarian lowcarb

eating? I <will> eat meat, but it is not my first choice. Also, I kinda

figured peas were high carb (darn, I love them)..... What about other veggies?

And beans? I also love fresh green beans and broccoli, and celery. Are

there any meatless lowcarb foods out there? (I have not checked the

artificial meat products like " veggieburgers " , maybe some of those are lowcarb

enough to use?

Again, I am not strictly vegetarian, just prefer veggies and grains.

Oh, about Jicima..... It is great sliced thin, and sprinkled with a little

salt, lime juice and chili powder. It has a slightly sweet taste to it as it

is, but I prefer salty/sour snacks.

I'd like to know about the Atkins diet too. I didn't know peas were

bad for me, I thought they were good. If we can't eat bread, grains,

vegetables, what do we eat.

And please, I'm new to this, what does bg stand for, I know it is

blood for what is the g for???

750mg odorless garlic pills 3 times a day. It doesn't cause any side

effects and they have done studies to prove that garlic lowers blood sugar,

cholesterol and helps prevent colds.

I find that it really works good for me.

Since we are on the subject of food, I was wondering if any of you have

noticed that the lite of a product may have more grams of sugar and

carbohydrates. For example, (these are not the exact numbers, just

approximate) a Lite Ranch salad dressing had 40 calories, 3g of sugar and

the Reg. Ranch had 130 calories and 1g of sugar. Do you go with the less

calories or the less sugar and carbs? And why do they add more sugar to

lite products???

Just Curious,

<< Jicama sounds interesting... do you know how many carbs? >>

You know.......I am not sure. I was told it was a " lowcarb " food, but being a

root vegetable, it may not be. I looked in a little carbohydrate counter and

did not see it listed. If you have a counter with more ethnic foods, maybe it

will have it. It is the consistency of water chestnut, and a less pronounced

taste. Some people say it is like a very bland very crisp apple.

If you don't know what it is, it is a root vegetable and can grow huge. I

usually see them about the size of a softball at the store, but cantaloupe-

sized ones are not uncommon. The skin is ugly and dark brown, and the inside

is very fibrous, juicy, and stark white.

It really tastes like nothing to me. I am used to it either being offered raw

and peeled for salads or served with lime, chili powder and salt. It can be

cooked like turnips though I think.

Where does one find carbohydrate and sugar counts for exotic ethnic foods? I

like a lot of that kind of food, but have NO clue as to what is in it.

Yaay Fergy!!! WTG! I LOVE this way of eating :)

There is an atkins support list available at http://www.onelist.com if you

are interested in talking with people on the same kind of WOE. It's been

tremendously helpful to me :)
