Occasionally too much coffee will give me diarrhea that's almost as bad, but I don't get the gluten headache with it. I had temporary dairy intolerance with milder symptoms but that went away two months after being gluten-free. That said, I don't really know how gluten has affected my autoimmune disease. I know there is a link but going gluten-free hasn't reduced my dosage of Levoxyl so far. > > For those of us whose autoimmune disease is affected by gluten, what other foods affect you similarly? Dairy gives me pimples on my neck and face and peanuts give me sinus pain. I also react to cocoa, coffee, soy and tomato according to a food reaction test. For the first time since my diagnosis of hypothyroidism 4 years ago, I lost 2 pounds in one month's time (both weigh ins were on my doctor's scale) and the ONLY thing I have changed is going gluten and dairy free (dairy for the most part...still eating ice cream and a tiny bit of cheese...working on that!). I gained weight at the first diagnosis of this disease when I was put on synthroid. I actually gained 30 pounds and then when I switched to NDT, I stopped gaining, but I didn't loose... until now I am eating mostly meat, raw vegetables, and raw fruit and that's all!! So happy to be turning things around for my health! It's molecule is so similar to the cells/tissue of the thyroid gland that primed antibodies can't tell the difference. It is a problem...I have never experienced a conscious awareness that I had a problem with gluten....with Hashimoto's, why would anyone? We cannot "feel" or sense what is going on at the molecular level....only lab markers would indicate a problem. I use to enjoy all the wheat & other gluten-filled products one could possibly enjoy without any outward physical symptoms, no stomach or digestive issues whatsoever. Then, one day I'm tested and my TPO Ab's were out of control. I was also deficient in several vitamins/minerals (those necessary for thyroid function). I eliminated gluten immediately at the recommendation of my Ph.D compounding pharmacist (including lipstick/lipgloss containing gluten, etc) and 60 days later my Ab's were reduced by 75%....but this wasn't something I could "feel.". I will say that now that I'm totally gluten & dairy free, my joints don't ache & my skin/hair have noticeably improved. Check out 's videos on youtube or his book "Seeds of Destruction". With GMO's we are dealing with a problem which is far more prevalent than just gluten. Most humans have some trouble breaking down some of the amino acid segments in gluten which our own gut bacteria is supposed to handle. In some, this leads to Celiac disease and an autoimmune attack on the intestine while in others this leads to only damage to the connections (tight junctions) between gut lining cells. This leads to increased permeability (leaky gut) which allows a lot of foreign matter to leave the gut and enter the bloodstream and trigger allergic and autoimmune processes in certain people. Google Dr Alessio Fasano who has published most of the scientific research on this. Guest guest Posted August 10, 2012 Report Share Posted August 10, 2012 Agree that this is all unbelievably complicated which is why the GMO/gluten thing has gone largely ignored by the media - most don't have the time or energy to try to understand it. I've spent the last month reading 100's of artciles and only now have some understanding of all this. Hopefully Dr Fasano and others will continue to research this area.
