Its possible your stoves low is just not low enough, it shouldnt cook down much overnight.I started my tea around 3 in the afternoon ,followed the directions, ended late morning when I woke up.It reduced only a very small amount. I put a cookie sheet on the stove, put the heat on very low, then set the pot on the cookie sheet on a portion of the sheet that is not over the burner. So the cookie sheet stays warm and the pot stays warm overnight.
