The best things to eat are real foods such as meat,eggs,veggies,olives, and stay away from anything in a box. It pays to be diligent at reading labels, as even some meats,etc. have wheat in them. My sister, who is a diabetic, recently had some s.f. licorice and was having trouble getting rid of her belly after saying that she was eating the way I was. I had picked up her package and showed her the wheat ingredient. It is even in some vitamins! Like I said before, stay away from anything in a box. I also take at least a tablespoon of coconut oil a day and I use uncured meats, which are more expensive, but I figure that my health is worth it and in the long run, I won't be spending as much on doctor bills. The cured meats have nitrates an nitrites in them, which can cause cancer, and also many times, have wheat

I have looked around for GF food and even places that are supposed to have it don't. Are there any stores that carry things that are wheat free (other than fruits and veges)? Winco is supposed to have such foods and I couldn't find any at our local store. Living in the High Desert, it is a problem because there are only a couple of stores to get food. I am just starting to get into this now and it can be a real problem. I naturally have been pretty low gluten for a long time. My body seems to work that way and I do what the body tells me. A lot of things I eat have oats but I have not been able to find gluten free oats either. Most of our stores handle things that move and the people density doesn't really provide enough income for additional competitive stores. Still learning.

I don't know if degenerative discs are due to gluten, but I've read that there is a connection. I've had three discs removed (THANK GOD!!) and two "cooked" with nucleoplasty, and have all sorts of irregularities in the remaining discs (mainly bulges). Nobody could believe I had a spine that looked like that back in my 20's. I also am autoimmune, and, despite all manner of celiac testing that I have done, it all came back negative. I do KNOW, however, that I am intolerant to wheat (at least) and have been removing it from my diet since last Thanksgiving. Come to think of it, I have NOT had as many spine flare-ups in the past year. I look across various different areas of my health and see only improvements here and there... then I

notice that they are in my wheat-free time-frame. The one BAD thing for me was going off of Prilosec - since I wasn't feeling any heartburn off of the wheat, I quit that pill. Apparently, I was still having GERD (as confirmed by scope/egd) ... I ended up with symptoms of hiatal hernia and in a panic at my dr's office. Not good. Back on that pill and all has calmed back down. That's disappointing, but I'm okay with it. The weight gain has HALTED (FINALLY) and I've dropped a few, all while off thyroid meds for the time being. BJMy husband bought me the book, The Paleo Solution by Rob Wolf, and has been listening to him on the radio. He is absolutley convinced that for my autoimmune, I must switch over to a completely Paleo diet. I am getting there slowly and already am feeling better. He is in full support and would like eat this way too- along with our children. I learn a little more about this stinking disease every day and also learn small, but significant ways to improve it :)Thanks for all your info!!! I would like to caution everyone on some of the grains that are considered gluten-free but in reality they are NOT. There are websites that provide gluten-free advice and recipes. These sites, including the Gluten-free Goddess do **not** seem to understand that **all grains** contain gluten to various extents.

Gluten-free doesn't always mean healthy! Gluten-free products likely contain as many calories as gluten options, because a gram of sorghum, corn, oat or rice flour appears to be metabolically similar to a gram of wheat flour. Many gluten-free packaged products also contain lots of sugar, soy and bad fats.

I stopped eating wheat, barley and rye gluten in 2006 and feft somewhat better. Last November I started a Paleo Diet aka Caveman/woman Diet and eliminated all grains, starches etc and feel so much better. The problem is I thought I was eating Gluten-free but I wasn't.

Gluten is a mixture of proteins found in grains. It is composed of two subfractions named prolamines and glutelins. The prolamine called gliadin is the most studied gluten subfraction in the medical literature, which relates to Celiac disease. BUT all grains besides wheat, barley and rye contain gluten including all rice, oats, corn, maize, millet, sorghum, and buckwheat etc.

Gluten is found in the endosperm of grass plants as well as other flowering plants, all grass plants or grains contain gluten proteins of some level. Wheat contains the largest percentage while rice contains the least. Newer studies are showing this, but the general public and some health conscience sites are still in the dark.

I am not saying that the Gluten-free Goddess is not of value, I use them sometimes but modify them. Just beware that the recipes for bread, cake, cookies, desserts and comfort foods because her recipes call for other "gluten protein flours" that many are unaware of but may be damaging. Plus, all (at least most) baking recipes call for sugar (all sugar even organic sugarcane or honey can be damaging to the body) and other refined products. I always replace sugar in recipes with Whey Low or real Stevia, and the bad fats with olive or coconut oil, which sometimes Katrina uses.
