Should I eat only those with low numbers, say, under 80?? How much of each of these should I consume in one day? On the whole, for most people, the items with the lowest number will have the smallest effect on your blood glucose. But there are strange things. White potatoes in Canada do not have an immense effect on me; but white potatoes in Ireland sent my blood sky high. So I eat baked potatoes sometimes at home, but when we were in Ireland, I just skipped the potatoes there and my BG stayed in control. Also, eating some protein and/or fat with carbohydrates usually slows absorption and keeps the BG under control. You'll have to experiment yourself using the index as a starting point.
